I had The Alambre from Alvaro Restaurant.
It was delicious. Alambre means wire. This dish was filled with steak that had likely been roasted on a wire, though I did not view the process, green peppers, onions, this super rich and salty marinade, (usually bacon, but not in mine), and cheese.
I have been fruitlessly searching to discover the sauce in recipes on the internet. At first I thought Worcestershire Sauce for the yellow bottle I saw. I’ll have to ask around…
Four condiments accompanied the pile of tortillas and meat: pico de gallo, a hotter salsa, an avocado-based salsa, and half-moons of red onion. It was a feast I could’ve shared with two or three more.
